Yellow Tadka Dal
Ingredients
for the dal:
1 cup red lentils*
2 green chillies, split
1 tomato, rough chopped
1 pinch turmeric
1 pinch salt
for the temper:
1 tbsp olive oil
1/2 tsp mustard seeds
1 tsp cumin
1/2 tsp ginger, grated
2 red chillies, torn into halves
a few curry leaves
1 pinch asafoetida/hing
Directions
1. Cook the lentils in 4 cups water until soft, along with the turmeric, green chillies and tomato (approx 20 mins). Let it cool.
2. Heat oil in a pan and add the ingredients for tempering.
When the mustard seeds start popping and the red chillies start to
change colour, add the cooked dal to this and mix well.
Add salt to taste.
Done!
* Note: the original recipe used moong dal (split, shelled moong beans) but I used red lentils because that's what I had in the cupboard at the time. It's still a wonderfully tasty dal and total, utter, comfort food.

Also- if you don't like your food too hot, leave out the red chillies from the temper.
