Sweet Potato and Chickpea Curry

Method -
1. Warm oil in a large pan over medium heat. Stir in onion and garlic, and cook until the onions are soft and translucent.
2. Stir in the curry powder, garam masala, ginger, cumin, and salt. Cook for 1 or 2 minutes, stirring.
3. Add the tinned tomatoes and chickpeas. Stir in potatoes. Simmer until the potatoes are soft, approx 20 mins.
4. Add the coconut milk and the chopped coriander.
tip: don't throw away the coriander stems - they are full of flavour; chop them finely and throw them into your curry!
