Refried Beans
Ingredients
2 x 400g cans black beans
2 small onions, finely chopped
3 cloves garlic, crushed/chopped
6-7 slices pickled Jalapeño pepper
2 tsp chili powder
1 tsp ground cumin
Veg stock cube
1/2 tsp salt
2 tbsp olive oil
2 tbsp lime juice
Method
Heat oil in a large non-stick frying pan over medium heat. Add the onions, garlic and chopped jalapeño peppers and cook gently, turning heat down to low and stirring often, until the onions are softened.
Add chili powder and cumin and cook for a further 2 mins, stirring well.
Increase heat to medium and add the drained black beans, stock cube, salt and a cup of water.
Using the back of your wooden spoon, mash the beans into the liquid, adding more water as needed until you get a nice paste with a good few whole beans remaining for texture.
Stir in the lime juice and serve. Tastes even better after a day in the fridge!
